CHCH: NC students brave frigid temps for ice wine harvest

On January 16, students from NC’s School of Wine, Beer & Spirits, including Winery & Viticulture Technician and Beverage Business Management students were featured on CHCH to demonstrate what goes into harvesting grapes used to make Icewine.

School Of Food & Wine Sciences Professor Gavin Robertson and Winemaker and alumna Allison Findlay (Winery and Viticulture Technician program, 2014) were interviewed during the segment speaking to the process of harvesting grapes and producing the wine.

Dean of Culinary, Tourism, and Beverage Studies Craig Youdale was also interviewed in the segment, mentioning that the school has been watching the weather very closely in anticipation of the ideal temperature: “The exact time of day, the exact time of hour … It needs to fit a perfect window. Legal standards is minus 8 [but] it can go a little colder than that.”
